Grading coffee beans in Brazil

In the Brazilian method, 300 grams of coffee is classified. The number of coffee beans equivalent to a complete defect is given below. For example, a set of three shells counts as a complete defect. On the other hand, a large rock counts as five complete defects. If the coffee bean has multiple defects, the highest defect is calculated. For example, black and insect-damaged beans are considered a complete defect due to their black nature.

Typically, coffee beans of the same origin and of similar size, color and shape are classified as specialty green coffee beans without defects. The coffee bean classification table is divided into two parts because Brazilian legislation allows up to 1% of external defects. After calculating the number of defects, use the third chart to classify the type and its rating level.
